Steamed Salmon Parcels

Let me start by wishing you all a very happy 2013.

Well it has been a while since I have written anything, sorry to all you followers out there!

2012 was a really busy one for me regarding work, in fact I am pleased to say that it was the busiest year since starting my business for cooking lessons, large catering jobs and romantic meals for two, which I all loved doing, so thank you to all my customers for booking me.

A new year and and a new start. I know a lot of you will be watching your weight after all that Christmas and New Year food, so here is a healthy recipe just for you!

 

Steamed Salmon Parcels

You will need one medium sized fresh salmon steak per person.

1 medium sized onion. You will need 2 onions if cooking for more than 4.

1 medium sized pepper. You will 2 peppers if cooking for more than 4.

2 cloves of garlic.

A sprig of fresh dill.

A knob of butter for each salmon steak.

White wine, ideal for cooking.

Olive oil.

Salt and pepper to taste.

 

Method

1. preheat your oven to 180, place your red pepper whole into an oven proof dish and rub some olive oil all over the surface, place in the oven and cook until the skin has browned on all sides, you will need to turn the pepper over a few times to ensure even cooking.

2. While you are waiting for your red pepper to cook, peel and slice your onion into rounds and separate and saute until light brown in colour in a medium sized sauce pan. You will need to have patients for this as it can take anything from 10-15 minutes to see the results needed.

3. Hopefully your red pepper should now be cooked, remove and place in a medium sized bowl and carefully remove the skin and seeds from the pepper and discard, keep any juices that have accumulated during the cooking, this is flavor! Roughly cut the red pepper ready to be used for the salmon.

4. Take your cooked onions and mix together in a bowl with the red pepper you have already prepared.

5. Season your salmon steaks on both sides with salt and pepper and massage the seasoning into the steaks with clean hands.

6. Place each salon steak into enough kitchen foil to make a parcel, which can be sealed tightly.

7. On top of each salmon fillet place an equal amount of the onion and red pepper mixture. Crush the garlic cloves and mix with the butter and place a small knob on each salmon steak, finish off with a sprig of dill on each one and  a dash of white wine.

8. Wrap each salmon steak in kitchen foil and seal on all sides to secure the filling and allow steam to do the cooking. Cook in the oven on a baking tray for 15 to 20 minutes, serve with lots vegetables of your choice or a mixed salad.
